Zupa ogurkowa. Very light and filling soup. Polish recipe, made it for Polish friends at home, they all liked it very much, even my daughter who does not eat soup. =))

Ingredients for Cucumber Soup:


  • Broth ( ready to serve) - 2 l
  • Cucumber (salted) - 5-6 pcs
  • Vegetables (frozen - carrots, leeks, celery root, parsley root) - 300 g
  • Sour cream (or cream) - 150-200 ml
  • Potatoes (large) - 1 pc
  • Butter (for frying vegetables) - 25 g

How to cook cucumber soup step by step with photos


Put sliced potatoes into broth.

While the potatoes are boiling, fry the vegetable mixture in oil.

Peel the cucumbers from their skins.

Grate cucumbers on a coarse grater.

Add fried vegetable mixture and cook over low heat for 10-15 minutes.

Add cucumbers and cook for another 5-10 minutes, then add sour cream or cream and bring to the boil. Polish soup ready!!
