This is a recipe for mushroom soup that I just love. But you definitely need at least 2 kinds of mushrooms for it. Ideally, rawroots and porcini. This year we almost didn't meet any ceps, the ones we harvested went into the drying room, and for soup we took mushrooms, which were not quite young - so we put them in the soup. If anyone tries making this first one, I'm sure they'll be very satisfied.

Ingredients for mushroom soup "double":

  • Carrots - 1 pc
  • Onion - 1 pc
  • Potatoes - 4 pcs
  • Mushrooms (wild mushrooms for the broth, but also noble mushrooms: porcini, ceps, aspen mushrooms, Polish mushrooms)
  • Pearl grits - 1 handful.
  • Vegetable oil (or butter for frying mushrooms and carrots with onions) - 1 handful.

You pick mushrooms in a forest, sort them, and boil them. Pour a little water into a pot with raw mushrooms, so that when boiled the mushrooms give up their juices and the liquid is added. You can eat the caper mushrooms raw, so boil them for about 10 minutes. They are already boiled.

Toss the mushrooms in a colander, and we have the broth. Very concentrated, the next day, if you cook the mushrooms from the evening and the soup after, it turns out as if the mushrooms were in jelly. The broth tastes sweet!

Ideally, the white, in our case - the mountain ash mushrooms, but the pieces should not be small - everything quickly roasted - and fry in butter (or vegetable) oil. Don't think that it's not so beautiful in a pan - it would be with white ones... But we don't have any white ones.

And then everything is almost like with all soups. Peel potatoes, carrots and onions. We grind carrots and onions and fry them. I usually add pearl barley when cooking mushroom soups, but I can not always guess the exact amount of cereal, so that the soup was not liquid, but was not thick. So I soak and boil groats in advance, and then use as much as I think necessary. In a saucepan with the broth from the raw vegetables we put everything: chopped potatoes, roasted vegetables, pearl barley and mushrooms - and cook until the potatoes are ready. We salt them 5 minutes before they are ready. You can eat it with or without sour cream. I like it both ways.
