Soup

  • Rice ("Basmati GOLD" from "Mistral") - 200 g
  • Chicken shank - 2 pieces
  • Broth (chicken or meat, hot) - 1.5 l

Meat balls

  • Beef - 200 g
  • Egg yolk - 1 pc
  • Coriander (powder) - 1/4 teaspoon
  • Caraway (powder) - 1/8 teaspoon
  • Nutmeg (powder) - 1/8 teaspoon
  • Salt

How to cook Indonesian rice soup step by step with photos


The ingredients are .

We also need 2 pots. One big one for the water and a smaller one for the soup. We make a water bath out of them later. Or just a steam cooker, if you have one.

First we do the meat balls. For that we mix everything on the list for them and roll them into little balls. Put 1/3 of the rice in a soup pot. Place our balls on top of it. The recipe says that the rice should be unwashed, but I went a different way. I rinsed the rice first, then spread it out on a towel for a few hours to let it dry.

Put another 1/3 of the rice on top and put the feet. And fill them with the rest of the rice.

Pour enough water into a large pot so that it touches the bottom when we put the pot of soup into it. Put it on the fire and bring it to the boil. Pour the broth into the rice and close with the lid. I increased the broth as it didn't taste like soup. Bring to a boil and transfer to a large pot. Bring it to a low boil for two hours.

We need to keep all the liquid inside the pot. And if the lid doesn't fit tightly, it won't. And here's the secret. We put a piece of foil between the pot and the lid and put a towel on top. Just make sure the ends don't hang down to the fire. AND KEEP TO THE FIRE SAFETY RULES!

Without stirring, pour immediately and serve.
