It is customary to add sour plums and walnuts to real kharcho, but my husband doesn't like that. So I make it this way.

Ingredients for soup "kharcho" simplified:

  • Meat
  • Carrots - 1 pc
  • Onion - 1 pc
  • Sweet pepper - 1 pc
  • Tomato - 1 pc
  • Tomato paste - 3 tablespoon
  • Rice - 2 handfuls.
  • Garlic
  • Red hot pepper
  • Vegetable oil
  • Salt (to taste)
  • Black pepper (to taste)
  • Seasoning (to taste)

How to cook soup "kharcho" simplified step by step with photos

Approximate set of products.

Boil broth. While it is boiling let's prepare vegetables. Slice carrots into long strips.

Fry it in vegetable oil. I sprinkle a little sugar on it.

Slice onions.

Bulgarian bell pepper.

We send it all to the pan with carrots.

In summer I always add fresh diced tomatoes in addition to tomato paste.

Hot peppers, a few circles, I cut them finely. You don't have to add them if you don't like very spicy.

Tomato paste.

Add water and stew everything for about 5 minutes. I also immediately add spices: saffron, turmeric, nutmeg, and ginger.

In the boiled, salted broth we send the washed rice.

When the rice is almost ready, add the dressing. I added coriander and basil.

Crush the garlic and add it to the soup.

Sprinkle the soup with coriander. We leave it to stand for 30 minutes, then serve it. Enjoy!!
