Ingredients for Lenten sauce:


  • Zucchini - 1 pc
  • Eggplant - 1 pc
  • Potatoes ( large) - 3 pcs
  • Spices (mix of pepper, salt)
  • Vegetables (dried)
  • Garlic - 2 clove

How to cook Lenten sauce step by step with photos


I made the sauce in a kettle (a high-sided saucepan or similar would work). Pour some olive oil into the dinette and put it on a low heat. Finely chop the garlic cloves and add them to the oil. Peel and dice blue potatoes, add them to the garlic, mix together and cover. Do the same with zucchini. Simmer for a few minutes and add water (so that it becomes a soup). Add dried vegetable mix (it can be any mix, I have a mix of carrots, onions and various roots). Peel potatoes, wash and cut into julienne strips, add to the vegetables. Season with salt, spices, stir. Braise until potatoes are tender. Serve lightly chilled (not too scalding hot). Enjoy!!!
