Light Soup with Rice and Olives

A really light, almost weightless soup, as fresh as a Mediterranean breeze... A great way to dispose of chicken or fish broth.
Ingredients for a light soup with rice and olives:

(pitted)

Lemon

Dill

1 bunch.

1 bunch.

Sour cream
(to taste)

You can use any kind of rice. I chose the variety "italica" white round grain from "Mistral". We measure out the right amount and boil it according to the instructions. |

While the rice is boiling, prepare the rest of the ingredients. I did not give in the recipe the exact number of them, you will soon understand why. Finely chop the herbs. Slice the lemon thinly. |

The broth is prepared in advance. They can be either fish or chicken. The rice is cooked. Begin assembling the soup in portions. Pour the desired amount of rice and the broth. |

Cover with greens, put lemon slices and black olives. We add as we wish. I like a sour taste in combination with the broth, so I squeezed the juice of the lemon. If you have chicken broth - you can add pieces of boiled chicken, if you have fish broth then add pieces of boiled or canned fish. |

Add sour cream. You're good to go! |
