This soup is made at one of my favorite restaurants in New York, "Red Lobster". It's a light, summery soup. Delicious and flavorful.

Ingredients for clam chowder "manhattan"-manhattan clam chowder:

  • Water - 3 glass
  • Clams - 24 pcs
  • Red Onion - 1/2 pc
  • Petiole celery - 2 pcs
  • Garlic - 2 clove
  • Tomatoes in their own juice (800 grams) - 1 jar.
  • Potatoes - 2 pcs
  • Parsley - 2 tablespoon
  • Oregano - 1 tablespoon
  • Salt (and pepper, to taste)

Here are the clams I used. Be sure to wash them well and make sure the shells are closed. If they are not closed well then you should not eat them.

Put the clams in the boiling water, cover and cook until the shells open. For about 10 minutes. Any shells that do not open should be discarded.

Put the shells on a plate and take the meat out of them.

Put the clam meat into a bowl and pour a little broth over it to prevent it from drying out. Strain the rest of the broth through a double layer of gauze and leave it. We will need it.

Pour 1 tbsp. oil and add bacon cut into pieces (about 1 cm). Cook, stirring occasionally, until golden. About 7 minutes.

Then take the bacon out of the pan and put it on a paper towel to let the excess fat run off.

In the pan, where the fat from the bacon was left, add another 1 tbsp. Put finely chopped onion, celery and garlic in the pan. Cook over medium heat for about 7 minutes. They should lightly turn golden.

Then add chopped tomatoes, tomato juice, clam broth and diced potatoes. Cook over high heat until the potatoes are tender. About 8-10 minutes.

Cut the clams in half, finely chop oregano and parsley and add to the soup. Cook for about 1 minute with the lid closed. You can salt and pepper if you like. But clams and bacon are salty on their own, so I never add salt.

Serve at once, hot.
