  • Pumpkin - 1 kg
  • Carrots - 2 pcs
  • White onion - 2 pcs
  • Garlic
  • Tomato - 1 pc
  • Greens
  • Sunflower oil
  • Chicken egg - 1 pc
  • bay leaf
  • Cream cheese - 70 g
  • Stuffing meat (According to your taste. I use beef ) - 300 g
  • Almonds - 20 g

How to cook pumpkin cream soup with hedgehog beef step by step with photos


Prepare all necessary ingredients.

Prepare stuffing for the hedgehogs: Finely chop 0.5 onions, 2 cloves of garlic. Knead everything into the filling. Add egg. Salt, pepper to taste. Mix everything.

Shape pre-made stuffing into hedgehogs

Put melted cheese in the middle of the hedgehog.

Grease the ready urchins with vegetable oil

For the broth we need: Ginger 0,5 onion 2 garlic cloves bay leaf Salt, pepper

Peel carrot, onion, garlic and ginger. Put them all in a saucepan. Taste and season with salt, pepper, bay leaf

Put them in boiling water. Skim off the foam. Cook for 20 minutes on low heat

While broth is boiling peel and slice pumpkin and carrots. Place these on a baking tray and drizzle with oil, Season with salt, pepper and all seasonings (to taste) Bake in the oven at 180 degrees until crispy, about 25 minutes

Slice onion, garlic and ginger and fry over high heat until golden brown.

Remove the urchins from the broth and strain it. Measure 1.3 l of broth and add it to the pan with the vegetables and fried onions. Cook for 10 minutes.

Puree the soup with a blender. Sprinkle almonds on top of each hedgehog, pour soup onto bowls. Enjoy!!!
