Red Peanut Soup Shades of Africa

Every sunset in Africa is an event.
New colors, new sounds, new smells. Shadows appear, suggesting that life by day must give way to life by night. At the junction of day and night Africa is reborn.
It's probably no secret that the peanut is not a nut, but a legume. And like many other legumes (like peas and beans) it is a very good ingredient in soups.

How to cook red peanut soup "shadows of africa" step by step with photos

Main ingredients for the soup.
Grated tomato flesh is already cooked in this soup.

Put the chicken shanks to the boil, with salt to taste.

If the peanuts are not peeled, peel them.
|
|
Pour water over the peanuts and simmer for an hour. |
|
After this time, pour the water off the peanuts, cool them down, and put them in a blender with some tomato puree and garlic. |

Pour 1.5 liters of chicken broth into a separate pot (we will need chicken shanks later) and boil in the broth grated yams. Salt to taste.

In about 15 minutes add the peanut mixture from the blender, and continue cooking on medium heat under a lid. |

In the meantime finely chop onion, red bell bell pepper and carrots. Fry all together in a pan with vegetable oil. |

Pan fried meat into the soup. Add spices according to your taste. Cover the pan with the lid and let it simmer on low heat for about 30 minutes. |
|
We pour the ready soup into plates and put a boiled chicken leg in each plate.
Garnish with greens if you wish. |
