  • Chicken (shins) - 4 pcs
  • Peanuts (peeled fried, preferably unsalted) - 1 glass
  • Black pepper (red sweet) - 1 pc
  • Onion - 1 pc
  • Batat - 1 pc
  • Carrots - 1 pc
  • Tomato (pulp rubbed through a sieve) - 7 tablespoon
  • Garlic - 4 clove
  • Water (for chicken broth) - 2,5 l
  • Seasoning (curry, cayenne pepper, chili, etc.д. to taste)
  • Salt (to taste)
  • Vegetable oil (for frying) - 4 tablespoon

How to cook red peanut soup "shadows of africa" step by step with photos


Main ingredients for the soup. Grated tomato flesh is already cooked in this soup.

Put the chicken shanks to the boil, with salt to taste.

If the peanuts are not peeled, peel them.

Pour water over the peanuts and simmer for an hour.

After this time, pour the water off the peanuts, cool them down, and put them in a blender with some tomato puree and garlic.

Pour 1.5 liters of chicken broth into a separate pot (we will need chicken shanks later) and boil in the broth grated yams. Salt to taste.

In about 15 minutes add the peanut mixture from the blender, and continue cooking on medium heat under a lid.

In the meantime finely chop onion, red bell bell pepper and carrots. Fry all together in a pan with vegetable oil.

Pan fried meat into the soup. Add spices according to your taste. Cover the pan with the lid and let it simmer on low heat for about 30 minutes.

We pour the ready soup into plates and put a boiled chicken leg in each plate. Garnish with greens if you wish.
