  • Quinoa (Quinoa, Quinoa "Mistral") - 0.5 glass
  • White onion - 0.5 pcs

  • Garlic - 4 clove
  • Tomato paste - 2 tablespoon
  • Broth (meat or vegetable) - 0.7 l
  • Chili pepper - 0.5 pcs
  • Zira - 0.5 teaspoon
  • Sweet paprika (powder) - 1 tablespoon
  • Avocado - 1 pc
  • Lemon - 0.5 pc

How to cook spicy quinoa soup with avocado step by step with photos


Shred half an onion and a celery stalk and saute in olive oil.

Add 1 paprika, half a chili pepper (I had a small dried one), a pint of zira, pepper (crushed). Pour half a glass of broth and simmer for a couple of minutes.

In the meantime carefully wash quinoa (if poorly washed it can be bitter)!) and add it to the pan. Add tomato paste and minced garlic cloves. Let's heat everything together for a couple more minutes. Pour everything into the pot. Add 0.5 to 0.7 liters of broth. I had chicken broth. Cook until the groats are cooked. Season with salt.

Meanwhile we cut the avocado and pour some lemon juice on it, to prevent it from turning black.

Pour the ready soup in a bowl and lay the avocado on top. Sprinkle with greens. Cilantro is a nice touch. Garnish with a slice of lemon.

Very tasty, spicy and fresh at the same time. Reminds me of something between kharcho and rassolnik. But with an exotic flavor. Enjoy your meal!
