Ingredients for White Bean and Tomato Soup:


  • Beans - 225 g
  • Water (or unsalted broth) - 850 ml
  • Bay leaf - 1 pc
  • Onion (large) - 2 pcs
  • vegetable oil (or butter) - 1 tablepoon
  • Enrobed tomatoes (or fresh - peeled and chopped) - 450 g
  • Salt
  • Black pepper (freshly ground)
  • Sugar (pizza)
  • Greens (parsley, basil)

How to cook white bean soup with tomatoes step by step with photos


For the soup you will need: (I tried making it with colored beans - not worth it)

Soak the beans in cold water all night. In the morning cook until tender, adding a bay leaf. Time depends on the beans - 1-1.5 hours. Onions - chop and fry in oil for 10 minutes (for "5"-"6" out of 9). Add to the beans. Add chopped tomatoes. Pour in broth or water. Cook for about 10 minutes.

Season the soup with salt and ground pepper. I usually use a mixture of five peppers. The soup is ready, but it can be pureed. In this case, DO NOT FORGET to remove the bay leaf!

I like something floating in the puree soup "floating". So I set aside some of the cooked beans (about 1/4-1/3) and add them to the already cooked soup. Greens to taste, but I think basil is needed where the tomatoes are. Top with a little pink pepper from the mill.

Garlic bread - you can add dried garlic powder and herbs to the wheat bread dough (like for focaccia) or just grill the bread slices and rub them with a slice of garlic.
