In preparing to post this recipe, of course, I used a search. The search yielded 64 variations. Half of them are not kharcho at all, there's nothing in them. The other half of them represent perfectly acceptable variations. Some of them even say that it is real kharcho. What can you do, it is a popular dish which has long spread throughout our vast territory, from Murmansk to Vladivostok, altering to local conditions, bending to Soviet Dining Standards and following the whims of restaurant chefs.
I do not pretend that my soup is called real kharcho. This is a compilation of my childhood impressions, of Soviet kharcho (in the best sense) and of my friend's Georgian mother's kharcho. Besides I managed to watch how it is made in a Georgian restaurant.
So, my version.
