My first (and successful!) experience with mint in a hot dish, not in a dessert or tea. The soup made its way onto our menu, thanks to Rose Elliot, her "The bean book". According to the author, chickpeas are used a lot in Spanish cooking (sopa de panela). And this soup is a wonderful combination of chickpeas with mint and garlic. (I apologize for the pale, boring photo: there's a lot of foam after pureeing. After a while, after standing for a while, the soup gets brighter, greener. But I accidentally deleted a good photo.)
