Bean and Nut Soup

Cooked Soup with Beans and Nuts

Autumn is a great time to stock up on nuts, and I recommend buying dried beans as well, you can make so many delicious dishes from these products! For example, dasholeps - spicy and fragrant soup with a spicy note. It's easy to make, and if you have pre-cooked beans it's also very fast. Great for Lent - nuts and beans are rich in protein and make you feel full for a long time.

Pashket Soup

Cooked Pâtisserie Soup

My favorite and most delicious soup. My grandmother's lifelong recipe, which she in turn inherited from her grandmother. She used to make it mostly for holidays; the soup is still remembered by all the relatives and friends who used to visit her. This recipe is very hard to find on the Internet, I found just a couple of references to "Pashket"- It's a very Astrakhan dish, and they used to cook it mostly with fresh fish in a Russian oven. We cook it in the oven with meat or chicken, but it's also very tasty. Thick, rich soup languishes under the dough, which in turn is soaked in this flavor! Honestly, this dough is my favorite part of the dish)

Curry soup with apple

Cooked Curry Soup with Apple

Time to cook: 90 minutes

Total Servings: 8

A French variant of the soup, which has its roots in Indian cuisine. It may have made its way with the help of British colonists from India to England and then on to France. Of course, the French version of Potage Mulligatawny is quite different from the Indian version, but hints of curry still remind us of its origin.

Rich Spanish meat soup Rancho Canario

Cooked thick Spanish meat soup rancho canario

This soup is something incredible! I'll start by saying that my oldest granddaughter came in from her walk and squealed in the hallway: "Grandma, HOW good does your soup smell?!" And then I saw a completely empty, almost lined, plate for the first time since she went to kindergarten at the age of 3 (now she is almost 8). However, I will honestly say that my youngest granddaughter, who is 4 years old, didn't like the soup too much. The rancho canario, a thick soup from the cuisine of the Canary Islands, does not have a single recipe, and each family cooks it in their own way. The ingredients may include different types of meat, pork ribs, pasta, tomatoes, saffron and, of course, chickpeas. This dish is served with a special type of bread made of corn flour mixed with water and topped with bits of cheese, called gofio.

Celery Soup

Cooked celery soup

Time to cook: 30 minutes

In my Yoga Food cookbook I found a simple celery soup. I made it with roasted cashews, especially if you don't eat meat products. I don't add cashews, as they are still undesirable to my kitchen dweller and to me because of their high caloric content.
