Ingredients for thick soup with wild rice:


  • Beef - 800 g
  • Wild rice (TM "Mistral") - 50 g
  • Bulgur (can be replaced by soup pasta, pasta which is in the form of rice) - 100 g
  • Onions - 1 pc
  • Carrots - 1 pc
  • Greens (for decoration as desired) - 1 bunch.
  • Salt (without topping - to taste) - 0.5 tablespoon
  • Black pepper (to taste) - 2 g
  • Mushrooms (any) - 150 g
  • vegetable oil (for frying) - 2 tablespoon

How to cook thick soup with wild rice step by step with photos


For the broth you need about 600-800 grams of beef on a bone. We will cook the broth in a 3-liter pot. Pour water on the meat until it just disappears. Bring to a boil, simmer for 5 minutes at a low boil, drain the broth. The meat is washed from the foam, pour the second time with water, almost to the edge of the pan, bring to a boil, salt and cook until the meat is ready at a very gentle boil.

Since the broth I cook in advance, the next day I remove the solidified fat from it and strain. If your family likes a rich broth, you can skip this step.

In advance I pour water overnight wild rice, wash it in the morning, it swells up a lot, and boil it until it is half-ready separately so that the broth does not darken. In the broth I poured bulgur or soup paste in the form of round rice, chopped carrots, and boiled until half-ready products. Then I poured boiled until half-cooked wild rice.

I fry small mushrooms very quickly in advance, sliced cooled, in the frying the whole mushrooms keep better juiciness. You can use any wild mushrooms.

I put into the soup fried mushrooms, onions, chopped meat, bay leaf. Cook until all products are ready, season with salt and pepper as needed. I add fresh herbs to the soup bowls as I serve.
